90 Minute Buffet

We find that serving food at multiple stations around the reception area has several advantages over the traditional central buffet table approach. Two of the most significant are that your guests will be more likely to circulate and meet each other, while spending less time waiting in line for food. The number and placement of food stations is determined according to the menu chosen and number of guests attending.

If the Station is served by an attendant; please add $75 per attendant for the first 90 minutes of the station.

ORIENTAL WOK OR MONGOLIAN GRILL STIR-FRY 

Assorted fresh meats and vegetables stir fried with your choice of sauces.  Noodles, Steamed Rice, Oriental fried rice, Egg rolls and fortune cookies.

ITALIAN PASTA CREATIONS

Fine Pastas with sauces: Chunky Marinara, Alfredo, White Wine and Pesto. Condiments include: Toasted Pine nuts, Olive Oil, Fresh Butter, Sun Dried Tomatoes, Diced Tomatoes, Capers, Sliced Mushrooms, Italian Olives, Peppers, Basil, Shredded Fresh Parmesan, and Hot Red Pepper Flakes, Garlic, Onion Slivers, Four Cheese Blend.

GREEK STEAK DIANA FLAMBE 

Tender Slices of Beef Display Sautéed in Butter, with Diced Tomatoes, Mushrooms in Sauce, Cracked Pepper, Parsley, Mustard, and Wine, then flambeed with Brandy for a dramatic effect. Steak Diana is served with Pita Bread and condiments.

RUSSIAN FLAVORS

Beef Stroganoff with Mushrooms, and Piroshki with Potato. Buckwheat Blini Pancakes or White Toasts Topped with Red Salmon Caviar, Sieved Egg, Onion & Sour Cream.

Russian Options to add: Black Sturgeon or Golden Whitefish Caviars.

PARIS STREET FOOD STATION 

Your Guests enjoy Three Delectable Fillings in large Vol Au Vent Puff Shells: Shrimp and Scallops in Saffron Sauce, Beef Bourguignonne with Mushrooms, Carrots, and Pearl Onions, and Chicken Curry with Coconut, Almonds, and Raisins.

NEW ORLEANS BOURBON STREET 

Crab Cakes with Mustard Sauce, Red Beans and Rice, Jambalaya, Andouille Sausage, Crawfish, Fried Okra. Corn Bread.

SOUTHWESTERN STATION 

Buffalo Wings, BBQ Chicken, Beef Chili Con Carne, Potato Salad, and Corn Bread.

ITALIAN BRUSCHETTA STATION 

Roasted green and red peppers, eggplant and broccoli rabe, diced and seasoned in an extra-virgin olive oil and served on traditional toasted Italian breads. Fresh vegetables of all kinds will adorn this station. We will present bushels of eggplant, zucchini and Italian decor giving this station a true Italian flair.

GRILLED PANINI STATION 

Our panini are grilled on fresh Italian baked breads, brushed with virgin olive oil, to include but not limited to: Bistro ham, California club, classic Italian, goat cheese portabella w/roasted red peppers, vegetarian, peppered roast beef with sage aioli Many more varieties!!

VEGETARIAN STIR FRY STATION 

This dish will start with freshly prepared Chinese yellow egg noodles, then we’ll pile on sautéed and steamed onions, bok choy, peppers, mushrooms, sprouts, water chestnuts, baby corn and any other seasonal vegetables we can find. There are several “sauces” including soy and hot sauce for the variety of guests’ tastes!

HIGH TEA STATION 

Tea Sandwiches; Ginger Scones, Rosemary Currant Scones with Devonshire Cream, Lemon Curd and Homemade Preserves; Bowls of Strawberries served with Crème Fraiche and Brown Sugar; a selection of miniature desserts, tea, regular and decaffeinated coffee.

AMBROSIA STATION 

An Assortment Of Elegant Imported And Domestic Cheeses, Fancy Fruits With Gourmet Crackers. Crisp Vegetable Crudités And Dips: Select From Spinach Hummus, California Onion, Curry\Dill And Roast Red Pepper. Freshest Seasonal Sliced Fruits Including Melons, Berries, Grapes, Kiwi, Pineapple, And Oranges.

ROYAL THAI WOK STATION (copper service) 

Stunning copper woks simmering with Tom ka soup; Green Curry Crab; Ginger Chicken stir fry . Other entrees include Basil Fried rice; Pud thai noodles; Jasmine rice. Cold items include cucumber salad, shredded carrot, bean sprout.
